Take a trip to France with this collection featuring Frerejean Frères Champagne, a blend of Chardonnay and Pinot Noir aged for a minimum of five years, producing an elegant Champagne that embodies the richness of the Frerejean Frères terroir. And low brut dosage and late disgorgement mean that it’s both balanced and generous.
We’ve paired your champagne with decadent creamy cheeses, rich creamy cheeses pair perfectly with Champagne as the bubbles cleanse the palette whilst the savoury taste of the champagne will compliment the gentle flavour of the cheese.
Brillat Savarin, Triple Cream, Cow’s Milk, France
The Will Studd Brillat Savarin is a decadent triple-cream cheese, it takes its name from the famous 18th-century French food writer Brillat Savarin, and was originally created in the 1950s by Parisian affineur, Pierre Androuet.
This example from Bourgogne, France is unique because, unlike its industrial cousins, it’s ripened under a thin coat of wrinkled yellow Geotrychum mould naturally found in unpasteurised cow's milk. This mould is rarely used because it is hard to wrap, but the poplar wooden box creates the ideal, moist microclimate for it to thrive. Deliciously creamy with a slightly chalky centre when young, the texture gradually breaks down until it can be scooped from the centre with a spoon close to its use-by date.
Delice de Bourgogne, Triple Cream, Cow’s Milk, France
This decadent triple cream from Burgundy is made with whole milk enriched with extra cream. It’s incredibly rich and has a melt-in-the-mouth texture that delivers creamy flavours and finishes with a mild tanginess. The complexity of this cheese belies its delicious ooziness.
