Working with artisan cheese maker Victoria McClurg from The Barossa Valley Cheese Co., her cheeses pair deliciously with the gin selection. The Barossa Valley Cheese Co. Le Dame - a rare, semi-hard goat milk cheese matured to mellow and develop complex characters with a bready, yeasty nose, flaky texture and a savoury, nutty finish.
Section 28 Monte Rosso, inspired by Italian Teleggio, cheesemaker Kym Masters has created his version in the Adelaide Hills of South Australia. It’s creamy interior is contrasted by a thin aromatic washed rind.
