We work closely with fellow Port Melbourne local, Starward Distillery, to have a whisky producer on our doorstep makes for some great collaborations. This collection pairs their Two Fold Whisky with three cheeses.


Starward Two Fold (Melbourne) - smooth, tropical, lightly spiced. Silver medal winner at San Francisco World Spirits Awards 2021. An Australian double-grain whisky. For depth, we use malted barley, just like our Nova. For an aromatic, dry flavour, we use Australian wheat. Lightly charred or steamed barrels. Sourced from Australian wineries that make great shiraz, cabernets and pinot noirs. Often filled fresh when the barrel is still wet with wine. We mature each whisky separately in Melbourne’s wildly varied climate, then deftly combine. Smooth as silk. Spiced vanilla, tropical fruits and cereal characters rounded with red apples and berries.


Paired with three of very different cheeses - a cow’s milk cheddar, buffalo milk blue and an aged goat’s cheddar.


Barely Buzzed, Cheddar, USA - the espresso and lavender rub imparts notes of butterscotch and caramel, which are prevalent near the rind, but find their way to the center of the cheese. This is a full-bodied cheese with a nutty flavor and smooth texture. Hours after it’s made, the special grind is rubbed on the rind. The wheel ages for 6-8 months.


Berry’s Creek Gourmet Cheese Co., Riverine Blue - made by Barry Charlton in Gippsland, Victoria, using milk sourced from a local herd of buffalo at Sunrise Plains Farm. The buffalo milk gives a creamy richness to this cheese, which perfectly compliments the lovely fruity and spicy notes from the blue mould.


The Barossa Valley Cheese Co. - Le Dame - a rare, semi-hard goat milk cheese matured to mellow and develop complex characters with a bready, yeasty nose, flaky texture and a savoury, nutty finish.
